Jamie Oliver’s new restaurant,
Barbecoa, a collaboration with well-known American chef
Adam Perry Lang, opened for business this week as part of the new shopping centre
One New Change. Speirs + Major collaborated throughout the design process with
Design Research Studio – Tom Dixon’s interior and architectural design studio – and
Jamie Oliver Restaurants to produce a vibrant and creative lighting scheme.

Light was used throughout the project to reveal the colour and texture of fire evoking materials such as charcoal, brass and Corten steel, which echo the restaurant’s celebration of meat and fire. In response to increasingly stringent energy requirements, LED downlights were used throughout the project.
In the butcher’s shop on the ground floor of
One New Change, light is used to enhance the displays of meat both on the counters and within floor to ceiling glazed refrigeration rooms, with special attention given to ensure the freshness of the meat is preserved. The butcher’s shop supplies all the meat for the restaurant as well as being a public walk-in retail unit.
